Seated, tea and menu are brought,
Since it's the招牌, of course it's sought.
Fresh-cut, handmade with skill,
Only then it fits the bill.
Half a cup of soy sauce placed ahead,
Add sesame for sweetness spread.
Scallions and grated radish thrown,
Seasonings give a salty tone.
Noodles white on a bed of salt,
Dipped and stirred, a red-hued halt.
Gently to the tongue, chew slow,
Wheat flavor subtly starts to show.
Light, not greasy, skin smooth and soft,
Chewy bite with strength aloft.
Finish with warm tea to clear the throat,
This meal cost just over a hundred notes.
